A very green and red palette today in another Year of the Eggplant delivery. 

  • Celeriac
  • Green Acorn Squash
  • Green Bell Peppers
  • Red Beets
  • Red Kale
  • Red Leaf Lettuce
  • Rosa Bianca Eggplant
  • White Kohlrabi

Kohlrabi: cut off the edible leaves and store separately. The bulb (it doesn’t grow underground!) can be treated similarly to the stem of broccoli since that’s what it is, the stem. Slice and braise, chomp as a snack, grate raw into salad, julienne for cole slaw, roast like root vegetables, spiralize into koodles.

Celeriac: cut off the edible leaves and store separately. You can cook celeriac like or with potatoes, for a lovely crispy green flavor add. Mashed potatoes? Replace half of the potatoes with celeriac.Potato gratin? Alternate slices of celeriac and potato. Do you like parsnip soup? Make celeriac soup.

Come to think of it, you could treat kohlrabi and celeriac similarly. I’m thinking kohlrabi-celeriac-potato latkes will be a weekend experiment.
