Baby greens: This seems to be descriptive of tenderness than size, because the last baby bok choy from Week 6 were the size of cabbages.
Jerusalem artichokes, also known as sunchokes or fartichokes: Save your Week 6 potatoes because you’re (likely) going to want to cook those together. They’re actually the root of a North American-native sunflower. They’re quite delicious but often have the side effect of farts — hence the nickname. They cook a lot like potatoes, so I recommend doing half and half until you get a feel of how it affects you. Some people find boiling it helps with removing whatever it is that causes the indigestion. Try boiling sunchokes, pouring off the liquid, then mashing with potatoes for mashed potato-sunchoke. Other good uses: thin sliced baked chips, or cubed and roasted with olive oil.
I’m clearing out the stock bag. It’s a tiny archaeological mystery. I remember putting these celery ends in but I don’t remember what these thin stems are – cilantro stems? maybe mizuna ends? The resulting stock will be the basis of lettuce soup this weekend, and maybe bean and kale soup next week.
