Garlic scapes: one of my spring favorites. Cut into green bean sized pieces and cook like green beans. Or make garlic scape pesto, the next step in seasonal pestos.

Cilantro: Add to rice for cilantro lime rice that pairs well with Mexican food, or make a yogurt based cilantro lime dressing that can be used on salad or with chicken.

Collards: Southern style collards and a vegetarian version. I’m going to make a large batch with a mix of collards and green cabbage.

Green cabbage: This coleslaw recipe has an extra step that is extra worth it (purging excess water so the coleslaw doesn’t get soggy). Or ferment your own sauerkraut.

Napa cabbage: A softer cabbage than Green Cabbage, but try interchanging them if needed. Try Sichuan Napa cabbage stir fry.

Two more heads of lettuce means more lettuce soup. Pairs well with crunchy sourdough toast. I like the 2024 addition to the Greenbelt Farmers Market, Atwater’s Bakery but LFFC also offers a Bread Share.
