The first tomatoes of the year necessitates this article about storing tomatoes. There are lots of different opinions and experiences about storing tomatoes, but that’s my go-to. Fortunately, I only need to store half of them this week 🙂
Green mustard: a tiny bit in salad can be interesting but it is quite strong. I prefer it cooked, sometimes with cabbage or something else to further dilute its strong flavor. About mustard greens.
The internet says these little Quirk Cucumbers are good for snacking and pickling. They also seem like a good option for a vegetable garden with prolific yields and resistance to disease.
A lot of these vegetables are great raw. I can see a nice vegetable tray with hummus or ranch dressing or other dips with sliced yellow straight neck squash, broccoli, cucumbers, tomatoes, and even the garlic scapes. Or dice up all of the above and toss on top of the lettuces for green salads.
Yellow straight neck squash is a good all purpose squash that you can pretty confidently substitute in for any zucchini recipe. Ideas: muffins, lasagna, zoodles with pesto (remember last week’s “pestos?”), breaded fries, and soup.
I have not tried this recipe for Garlic Scape Egg Soup (egg soup!??) but it certainly looks like a showstopper if you need to impress someone this weekend.
