Stay hydrated during hot weather. Drink lots of water. Sugar snap peas, cucumbers, and grape tomatoes are a good snack, especially with a sprinkle of crunchy salt.
I’m plotting what to cook on Friday, the coolest day of this week. I will be making these stovetop zucchini fritters with the gold zucchini. In the oven, maybe roasted beets or kale chips.
Meanwhile, I’ll be eating lettuce-based salads and toast with sliced cucumbers. Maybe try this Summer Beet Salad Recipe (Beet & Tomato Salad) with shaved raw beets instead of roasted.
