This week’s Medium share contents:

This array is shouting refreshing chopped salad. Sweet corn kernels, halved grape tomatoes, diced bell pepper, sliced cucumber, with a glug of Italian dressing.
Or hummus/ranch/Bleu cheese dipping plate with sliced raw zucchini, cucumber, bell pepper.
Badger Flame Beets are one of those beets that are gorgeous when raw. Use a vegetable peeler to make thin slices for beet carpaccio (or add the slices to a salad or dipping plate).
Lemon cucumbers are mostly visually different from common cucumbers. Flavorwise, they are pretty similar. Maybe I’ll reserve them for perfectly round slices on sandwiches with buns, or cut into wedges like apple slices.
This would have been a great box during the heat wave. Fear not, plenty more summer to come.
