Graffiti eggplant is a type of Italian eggplant with a variegated skin instead of solid purple. Use in any Italian eggplant recipe, though perhaps ones with the skin on to showcase the colors.
In a similar vein, Chioggia beets are very much like common red beets, but the insides are a swirl of red, pink, and white. Raw or lightly cooked preparations preserve the color.
Here’s a basic recipe for rainbow spring rolls that uses red cabbage and sub the Cubanelle peppers for the bell peppers. Both are mild sweet peppers, but the cubanelle has a thinner wall.
