Here are the contents of my Medium share box this week:

Greens are back in force this week. Green dandelion has some bitterness and benefits from cooking, either a good saute or a quick blanch. I might throw it into some soup, like this minestrone recipe that also suggests zucchini or other summer squash that is definitely in abundance right now.
The cantaloupe is a welcome surprise. I’m thinking a red tomato and cantaloupe salad, maybe with sweet corn kernels too. Here is a recipe for Summer Tomato and Cantaloupe Salad that includes mint leaves and cucumber. If you’re feeling up for extra showmanship, use a melon baller on the cantaloupe, halve the red grape tomatoes, and add mozzarella pearls with basil and balsamic for a spherical caprese salad.
For Italian eggplant on a hot summer day, I like grilling them outside until they are mush inside a charred shell. That mush is the space-saving, delicious base for baba ganoush or baingan bharta. Or if you’re up for it, Turkish stuffed eggplant karniyarik or Filipino tortang talong. Lots of very different eggplant recipes out there.
