Here’s a recipe that sounds really good but I haven’t tried: Honey Sesame Kabocha Squash & Cabbage. It uses kabocha squash, red cabbage (sub this week’s green cabbage), ginger (Week 22), and fresh cilantro.
Leeks are like a delicious subtle onion. Let the leek shine in delicious recipes like Potato leek soup and buttered leeks. But if you want to keep it simple, you can use the leeks as an onion replacement. Except maybe not in this recipe for pico de Gallo, which uses tomato, hot peppers, and cilantro. The subtleness of the leek won’t be a replacement for the zing of raw onion, but might be worth experimenting.
The radicchio looks like a tiny head of red cabbage. It’s a bitter tasting leaf that gives some dimension to salads.
Sesame peanut soba noodle salad is an excellent vehicle for eating vegetables. The vegetables are pretty flexible. I might sub in radicchio and green cabbage for red cabbage and leeks for green onions, to accompany the cilantro and maybe halved cherry tomatoes. Also good would be bell peppers and carrots from Week 23.
