This week’s contents:

  • Anaheim Peppers
  • Butternut Squash
  • Garnet Sweet Potatoes
  • Green Beans
  • Orange Carrots
  • Red Leaf Lettuce
  • White Cauliflower
  • Yellow Onions

This is a much more voluminous haul, but I still have many Week 25 vegetables in the fridge. Fortunately, a lot of this week’s is long-term storable so I can catch up.

Storage

Separate the greens from the orange carrots. Eat the greens first. Yellow onions and garnet sweet potatoes go in the pantry but as far apart as possible since onions are bad influencers. The butternut squash also goes in the pantry/squash pile. While I’m at the squash pile, I will inspect them for any urgent cooking. If no squashes demand attention, I’ll use the carrot greens, lettuce, and green beans first.

Meal prep

  • Mirepoix: onions, carrots, and peppers can be diced and stored in the fridge for easy adding.
  • A sheet pan roast of sweet potatoes and butternut squash. Cauliflower can also be roasted. Mashed, can be added to things like carbs, pies, soups all week. Cubed, can be added to things like salads and side dishes.
  • Big pot of cauliflower soup this weekend when the weather cools down.
  • Salads: thinly sliced orange carrots and chopped carrot greens with red leaf lettuce. If you make a lettuce salad, easy to shove the carrot greens in too.

Ideas

I will make a nice big pot of cauliflower soup with Week 25 and Week 26 cauliflowers. I can’t remember if I still have Week 25 celeriac, but if it is still in the fridge, I’ll probably throw that in there too for a combo creamy soup. I will eat some fresh and then store in pre-portioned containers in the freezer. Easy to reheat. I’ll trade out a portion of parsnip soup, likely from the end of February.

Anaheim peppers are a versatile mild pepper. Add them to anything that needs peppers or a little crunch, or feature them in something like Sausage and Cheese Stuffed Anaheim peppers.

For an extra dimension on sautéed green beans and/or to make a dish for many people, I might add the Anaheim peppers, cut into long green bean shapes (shown in this video).

The garnet sweet potatoes are really good mashed and used in sweet potato pie.
