In my experience, the spaghetti squash, baby green bok choy, broccoli, celery, and romanesco cauliflower will keep the longest. The cilantro and scallions will keep well in water. I’ll focus on the lettuce and radish greens first.
This recipe for roasted radishes garnishes with parsley but could be delicious with a cilantro based sauce like aji verde. Here’s a recipe for Roasted Broccoli Steaks that would work for the Romanesco cauliflower too.
The cilantro and scallions and cooler weather brings my mind to pho. Here’s a discussion of pho with some links to recipes.
Maybe it’s the pho train of thought, but I also thought of cilantro with pasta, or for this week, spaghetti squash. I found this recipe for Garlic Shrimp with Cilantro Spaghetti Squash, which recommends serving with a side of sautéed greens – like sautéed bok choy or sautéed radish greens.
