Fava beans typically require 2 steps to get to the good stuff: shell, then peel the light green skin off the bean itself. A 30-minute freeze-thaw right before peeling the skin may make the peeling step easier. The pod is edible though, such as fried, though that might be best on younger/smaller pods than this batch. More fava bean ideas:
- a spring-y salad like Fava Beans, Strawberries, and Grana Padano PDO (possibly a half and half substitution of light green lettuce and bitter dandelion green would work in lieu of arugula?) ,
- roast the whole pod,
- macco di fava or fave e cicoria, an Italian fava bean soup with herbs or a bitter leafy green, like dandelion greens.
